Sweet and Sour Chicken

Happy birthday to little miss Kolette this weekend! We hope she has a fun birthday, and we miss her SO MUCH!!!

I will try to find the charger for my camera to post some zucchini recipes, Taraleigh. Maybe that will help, or perhaps you guys are just tired of zucchini at this point.

We have almost won the war with the fire ants. They are somehow getting into the kid's bathroom; we can't find their colony. Other than that, we cannot find any more ants in the yard. I mowed the whole yard over multiple days with a push mower, and I did not get bit by one ant. I did get a spider bite, though.

I love Chinese food. I like to find delicious recipes I can make at home. This recipe will make you want to stay in instead of going out to your favorite Chinese restaurant. 

The original recipe uses this to coat chicken on the BBQ, but I love it this way so much more. All of my kids love this so much. My boys do not like rice; they only eat rice if this sauce is on the rice. 

Sweet and Sour Chicken


3 chicken breasts

1 cup brown sugar, packed

1/3 c + 1 tablespoon ketchup

1 1/2 cups water

1 teaspoon salt

1/2 cup white vinegar

3 tablespoons soy sauce

1 Tablespoon cornstarch

1/3 c cold water


Boil the chicken in a large pan. When the chicken is thoroughly cooked, trim the fat and shred the chicken. Place the chicken in a bowl and set aside. 

In a large saucepan, add the water, sugar, ketchup, salt, vinegar, and soy sauce. Mix with a whisk and heat on medium heat. When the mixture starts boiling, combine cornstarch and water in a small bowl. Add cornstarch mixture to the sauce and whisk for 2-3 minutes to prevent clumping. 

Next, add the chicken to the sauce. And cook for several minutes. Serve over rice.
